Classic Fruit Tart

INGREDIENTS

for the crust:

1 1/2 cups graham crackers or digestive biscuits

1/3 cup white sugar

6 tablespoons of melted butter

for the filling:

One 8-oz package cream cheese softened

1/2 cup powdered sugar

1 teaspoon vanilla essence

for topping:

fresh berries or your fruit of choice

for the glaze:

5 tablespoons apricot jam

METHOD

1. Put graham cracker into a food processor and run till it becomes crumbs. Mix the crumbs, sugar and melted butter in a bowl until well-blended . Press mixture into an 8 or 9 inch pie plate and bake for 7 minutes. Remove from the oven and let cool completely.

2. To make the filling, beat cream cheese, sugar, and vanilla essence until smooth. Spread the filling evenly in the baked tart crust. Arrange the berries and fruit on top of the filling, covering evenly.

3. To make the glaze, add a bit of water to the apricot jam and heat it in a small saucepan.. Cook until loosened and strain. Let cool to room temperature.

4. Using a pastry brush, gently brush the glaze over the top of the tart. Refrigerate until ready to serve.
